Valentine's Day Power Snacks


Happy Valentine's Day!

Posting a day late...well the heart felt thoughts are still the same! Spread that love around and don't save it for one day a year. Every Friday is Venus Day and it's the perfect day for fun, creativity and acts of self love.


My prescription...Take off a Friday every now and then. Whoop it up and have some fun!

We have been playing, healing, resting, formulating methods of fun and rocking all kinds of new magic.


All our favorite self care ritual starts in the kitchen. Today we are sharing a tasty quick snack that will satisfy the traditional Valentine need for chocolate, plus some

COOKIE DOUGH ENERGY BALLS




ingredients-

1 cup cashews - soaked

1/3 cup pitted dates - soaked

1/4 teaspoon vanilla

3 tablespoons chocolate chips


directions-

Soak cashew and pitted dates in separate bowls for around 20 minutes. After soaking

blot dry with a paper towel. You don't want the dough to be overly wet and mushy.

Place all ingredients, except chips, into food processor (using an "S" blade).

Process until a smooth ball is formed. Break up ball and process again.





Break up the ball again, and add in chocolate chips. Pulse dough a few times to break up

chips and incorporate them.

Use a Tablespoon to measure out dough and roll into balls.

Store in an airtight container in the refrigerator. They should last around 1 week in the fridge - if you have that much self control.



Notes:

*Use organic ingredients.

*Chocolate chips can be exchanged for butterscotch, white chocolate, peppermint chips...have fun.

*If you want a vegan option - simply use vegan chips or cacao nibs.

*You can use sunflower seeds if nut allergies are a concern.
